Join us in exploring the rich and diverse culinary traditions of Catalonia, a region of Spain that is home to a wide variety of ingredients from the land and sea. After having lived in the region and worked at a cooking school near Barcelona’s famous Boqueria, (one of best and most diverse open air food markets in the world), I fell in love with so much of what the region has to offer: the wonderful food products such as preserved hams, lemons and olives, the culture of tapas, food festivals and late night meals at cafe tables in historic town squares. In this class, we will focus on some of the most celebrated dishes of Catalan cuisine: pan con tomate, Spanish tortilla, smoked fish fritters with aioli, Penobscot Bay paella and an intensely almond flavored cake.
