July Workshop

Our workshop program focuses on fundamental cooking and gardening skills, encouraging a more sustainable lifestyle. In each class, students work together to create a multi-course meal, made from local ingredients. Over the course of three days, students will learn a range of skills including knife skills, how to bake a crusty loaf of bread, how to maintain a culinary garden and how to make a lovely meal from what’s in your backyard. At Salt Water Farm, we cook instinctually, and by the week’s end, so will you.

Monday: Bread Baking, Backyard Gardening, Knife Skills and Culinary Basics (10am-2pm)

  • Making a crusty loaf of bread
  • Butter from fresh cream, served with garden radishes
  • Assembling a garden salad with herbs, lettuces and edible flowers
  • Making homemade vinaigrette
  • Eggs from the coop: asparagus frittata with local goat cheese and herbs
  • How to make cornmeal biscuits, first-of-the-season strawberries and fresh cream
  • A tour and discussion of creating an edible gardenscape: Seed starting, establishing beds, building compost, and integrating edible flowers, herbs and vegetables in a low maintenance garden plan

Tuesday: Seafood (10am-2pm)

  • Conversation about fish native to Maine: how to shop for fish and how to cook it
  • A visit to Mike and Lynn Hutchins’ lobster shop
  • Buttered toasts, local crab, chive mayonnaise, cucumbers, tarragon
  • How to handle fish and how to make fish stock
  • How to shuck an oyster and make a mignonette
  • Penobscot Bay bouillabaisse
  • Pie crust: Blueberry Galettes

Wednesday: Meat, Grains & Vegetables (10am-2pm)

  • How to shop for meat
  • Butchering (cutting, not killing) a chicken and making chicken stock
  • Basic cooking techniques: searing, braising, roasting
  • Baby beets and their greens with chevre
  • Wheat berries with grilled baby garden vegetables and herbs
  • Carrot cake with mascarpone frosting
