Consider the Lobster

Due to popular demand, we are now offering a class that features the one, the only Maine lobster! This class will be co-taught by Karen Federle (original owner of Trillium Catering Company) and Annemarie Ahearn, (owner and resident chef instructor at Salt Water Farm). We will begin with a visit to the Lincolnville Harbor Master’s house  to learn a bit about the trade and pick up a dozen of the liveliest lobsters around. Once back at the school, we will tackle three different tantalizing recipes: handmade pasta with a sauce of lobster, cream and herbs, grilled lobster with a Southeast Asian dipping sauce and a classic Maine lobster roll.
