Salt Water Farm MasterClass

Welcome to the Salt Water Farm MasterClass where students from around the country join us for an intensive week of cooking, eating and exploring the hidden gems of Midcoast Maine. Together, we will tackle knife sharpening and knife skills, butchery, bread baking, pastry, seasonal ingredient selection and harvest, food storage, entertaining, floral arrangement, cooking over fire and so much more. We will also sail the Penobscot Bay at sunset, share a fancy picnic on a mountain top, visit a working, no-till farm and enjoy lobster rolls on Rockport Harbor.

We have received many inquiries about next year’s MasterClasses. Below is the schedule, itineraries and prices. The MasterClasses are limited to 10 students each. We do have accommodations on the farm at our Seaside Cottage(opens in a new tab) and our Antique Barn Apartment(opens in a new tab) but they book quickly and far in advance. We also work with a number of nearby accommodations and are happy to make recommendations. Accommodations are not included in the cost of the MasterClass. Please email me if you have any questions.

Arrival – Day 1

5pm – A Toast and Welcome Dinner at the Salt Water Farm table and preview of the week’s activities

Day 2

  • 10am – Morning Cooking Class and Lunch : The essentials of a modern country kitchen and a farmhouse lunch (butchery, knife skills, bread baking, pastry and pie dough)
  • 5pm – Walk up Beech Hill for picnic dinner

Day 3

  • 10am – Morning Cooking Class: Harvest Day, cooking with herbs and edible flowers, egg cookery, biscuits, salads and dressings, seasonal sauces and brioche
  • 5:15 pm: An evening sail on the Penobscot Bay with acoustic music onboard

Day 4

  • 9am – Flower Arranging Workshop (optional) 
  • 11am – Visit to Tenderwild Farm and Tour with Peter Alsop
  • 12:30pm – Lobster Roll Lunch at Walker Park
  • 5pm – Interactive Cocktail Party at Salt Water Farm – A Focus on Entertaining Large Groups and Meal Prep with resident chef Alyson Flemming (cocktail making, simple pastry doughs for sweet and savory, seasonal hors d’oeuvres and tips on meal prep and timing)

Day 5

  • 10am – Morning Cooking Class and Lunch: Seafood Cookery (Guidance on selecting seafood, handling and cooking lobsters, shucking oysters, cooking fish filets in cast iron, shellfish cookery)
  • 5pm -Farewell Dinner – A Summer Meal Cooked over the Fire

  • 4, 4 hour cooking classes (three daytime classes and one evening entertaining class)
  • 2 dinners (welcome dinner and cooking over fire farewell dinner)
  • 2 dinner picnics (one on a boat, one on a mountain top)
  • Floral arranging class
